Have I really never made this? I made a crab dip once---and loved it. It could be one of those things... where I resist making something so addictive, to cheesy and creamy, only to avoid the inevitable: I will eat it all in one sitting. This 'problem' certainly applies to this dip. I knew I would love it, so instead of just making it for my family, I made it over the holidays---figuring the more mouths, the sooner it would be consumed. And I was right.

Easy to please, plenty of cheese:

3/4 cup mayonnaise ( Jarred works, though I DO adore homemade mayo) 1/2-3/4 cup Parmesan cheese-grated 1-13.75 ounce can artichoke hearts, drained (and chopped a bit) 1/2 cup spinach ( I use frozen, defrosted, and well drained ) 8 ounces cream cheese-softened a good dash of hot sauce

Directions:

1. Preheat oven to 375 degrees.

2. Thoroughly mix all ingredients together and spread into a small baking dish. (Pretty sure I spent more time picking out a fancy baking dish than I did tossing together this dip).

3. Bake 35-40 minutes or until heated through. Place under broiler if you would like the top browned.

Crackers anyone?
