I love a can’t-keep-my-hands-out-of-the-bowl snack. Some weak in the knees snacks are obvious: your favorite chips or nuts, cotton candy if you are my mom, chocolate covered peanuts if you are my dad. My sons love baked cheesy crackers and we all line up for truffle popcorn. What is your ‘addictive’ snack? Please share!
And lest you be short on must-have bites, I bring you yet another (you can thank me later, when your mouth isn’t full):
bacon-wrapped, almond-stuffed dates
you had me at bacon.
1/4 cup soy sauce
1/2 tsp ground ginger
3/4 cup dark brown sugar
2o dates, pitted
20 marcona almonds or smoked almonds
10 bacon slices, cut in half
Oven to 400. Put brown sugar on a plate. Mix soy and ginger in another bowl. Stuff dates with an almond, wrap in bacon and secure with a toothpick. Dip the dates in soy/ginger, put them on the plate and sprinkle them with sugar. Roll them around a bit, then place them on a parchment/foil lined baking sheet. Bake 20 minutes, let cool slightly and serve.
