snacks
truffle popcorn.
We make jokes about our chickens eating fennel; we jokingly call it ‘chicken crack’. It isn’t a pleasant term, perhaps, but it aptly captures the chicken’s crazy frenzy when fennel comes knocking. We will put in a nub of fennel into a pile of old lettuce and bread, watermelon peels and corn husks. And they find the fennel: quickly. And then they run around like… oh boy: a chicken… [more]
Cherry Almond mini muffins.
On our humble little urban farm we have a very, VERY large cherry tree. I gaze upon it frequently. Because it is so large—and hasn’t been pruned in many, many years—we cannot even reach the lowest branches with a standard ladder. (Ah: now ‘cherry picker’ makes so much sense!).
When we moved in, I had no idea what type of cherries were going to dangle from its branches. Until… [more]
stealing deviled eggs
I adore eggs. I like them scrambled, poached, over-easy. I sometimes insert hard-boiled eggs into my boys’ lunch—an extra bag filled with salt and pepper for the tossing. And who doesn’t love deviled eggs? They are brilliant finger-food for a party, perfect for after-school snacking and can be gussied up any which way.
I can vaguely remember the first time I tried them. I was four. It was Thanksgiving.… [more]
Chicken Curry & Raisin Wraps
Why haven’t I done this all along? Made a big batch of chicken salad or chicken curry salad ahead of time, for a quick-and-easy insert into tortillas/pita pockets for ‘lunch this week’?
I sometimes buy the little raisin and nut packets to put in my sons’ lunches. But one of my sons wasn’t too keen on the combination—the nuts make the raisins taste like nuts, he tells me. But… [more]
Jack 'o' lantern cookies
It’s really that time of year: the leaves are turning, dilapidated brown lunch bags hit my morning counter (re-use!!) and backpacks land on the floor in a variety of places. School papers and projects evidence our academic focus… I love that October is all about colors and routines, school books and of course decorating the house for Halloween.
Just this morning the Fedex man came to drop off a… [more]
I made pop-tarts today!
“I made pop-tarts today.” That wasn’t a sentence I thought I would say. I made pop-tarts from scratch!
The crust was super easy to make, the longest stretch of ‘work’ was the rolling, measuring and cutting into proper rectangles. But then, the filling was super easy: I just used nutella, jam and a quick cinnamon blend. SO worth the time.
And then, the ultimate test: the freezer. I froze… [more]
snacks revisited
It is interesting when you revamp your environment (e.g. going abroad for a year), to see what adjustments we make in our eating and cooking habits.
In Florence, I find myself converting measurements such as kilograms, pints, liters and grams, Celsius. In the states I relied on cups, teaspoons, Fahrenheit, ounces and pounds. I thought in quarts, not liters, and based my measurements on our American system. So I… [more]
pie dough surprise
I figure everyone makes this special treat with leftover pie dough. Am I right?
I grew up with this little treat.
When we were on our snowy, cabin-in-the-woods vacation, I brought two frozen pie crusts. One I used to make quiche; but we were low on eggs so instead of making a second quiche, I made this little treat for dessert one night. And I scored: my boys loved… [more]
after school snack: smoothies
Hey mom, why don’t you post on smoothies? My reflex response: because they are so typical in our family I don’t think they count. They couldn’t possibly be interesting to people.
And yet.
We love them and have them almost every day. And they are so easy to make, they evade the rigid parameters of a recipe. Our smoothies are typically enjoyed for breakfast or as part of an… [more]
